Ingredients (Makes ~8–10 small pancakes)

  • 1 scoop LittleVitz Super Greens powder 🍫🌱
  • 1 ripe banana 🍌
  • 1 egg 🥚
  • 80g oat flour (or blended oats)
  • 1 tsp baking powder
  • 80 ml milk (dairy or plant milk) 🥛
  • 1 tsp vanilla extract (optional)
  • Pinch cinnamon (optional)
  • 1 tsp maple syrup or honey 🍯 (optional)

Instructions

  1. Mash the banana: Mash the banana in a bowl until smooth.
  2. Add wet ingredients. Mix in: Egg, Milk, Vanilla
  3. Add dry ingredients: Stir in the Oat flour, Baking powder, LittleVitz, Cinnamon (if using). Mix until smooth. The batter should be thick but pourable.
  4. Cook: Heat a pan on medium-low. Add a little butter or oil. Spoon small pancakes into the pan. Cook 2–3 minutes each side until golden. Cook gently so they stay soft inside.
  5. Best Kid-Friendly Toppings 🍓: Top with: Sliced strawberries, Blueberries, Yogurt, Nut butter. And add a drizzle of honey for picky eaters:
  6. Bake at 160 in the oven, checking regularly, for about 40 minutes until a knife inserted in the centre comes out clean.
